Touquet’s salad

Restaurant Saint-Omer L'industrie Recipe proposed by the Restaurant L'industrie

  • 1 salad (garden or market gardener)
  • 7 basil leaves
  • 4 slices of smoked salmon
  • 1 lemon
  • 2 slices of Serrano ham
  • seeds selection "Jars&co"
  • croutons with garlic
  • flowers of moment (chives, dandelion, nasturtium, rose ...)
  • 1/2 red onion
  • raw seasonable vegetables (carot, cucumber, radish...)
  • 1 hard boiled egg
  • cheese shavings (parmesan...)
  • 2 ancient tomato varieties
  • 2 Mackerel fillets (mashed with cottage cheese, salt, pepper, basil, chives or dill) (For the mackerel rillette)
  1. Seasoning

    Wash the salad and the basil leaves, Season, then put in two deep plates. Add the seeds and croutons.

  2. Finely chop the onions and Cut the eggs into quarters. Add volume to this salad by adding smoked salmon, Serrano ham and a quenelle of mackerel rillette. Add the Cheese Shavings.

  3. Decorate !

    Decorate with a few colorful & edible flower petals. Finish with a few touches of aromatic herbs and lemon zest.
